Long Term Food Storage: Archival Preservation
Long-term storage requires protecting biological calories from the four primary agents of decay: **Oxygen, Moisture, Light, and Temperature**.
1. The Mylar and Oxygen Absorber (OA) System
To achieve a 25-30 year shelf life for dry goods, you must reduce internal oxygen levels to **<0.1%**.
* **Container:** Use 7-mil thick Mylar bags. Thinner bags (3.5-mil) are permeable to oxygen over 5+ years.
* **Absorber:** Use Iron-based Oxygen Absorbers.
* **Concrete Spec:** For a 1-gallon Mylar bag, use **300cc** to **500cc** of OA. For a 5-gallon bucket, use **2000cc**.
* **Process:** Fill the bag, drop the OA, and heat-seal immediately with a flat iron (impulse sealer). The bag will shrink slightly as $O_2$ (21% of air) is removed.
2. Selection: Stability vs. Rancidity
Not all food is suitable for long-term (10+ year) storage.

| **Rolled Oats** | 25 Years | Good calorie/nutrient profile. |
| **Brown Rice** | 6 Months | High oil content; becomes rancid even in Mylar. |
**Concrete Tip:** Store fats (oil, lard) separately and rotate every 12-24 months. You cannot store fats for 25 years without refrigeration.
3. Inventory Management: FIFO and PDCs
* **FIFO (First-In, First-Out):** Always consume the oldest stock first. Label every bucket with the **Pack Date** and **Expiry Date**.
* **Predictive Degradation:** For every 18°F (10°C) increase in storage temperature, the shelf life of food is cut in half. **Requirement:** Store food in a "Cool, Dark, Dry" location, ideally <60°F.
4. The 3-Layered Pantry
1. **Working Pantry (0-3 Months):** Items you eat every day.
2. **Short-Term Pantry (3-12 Months):** Canned goods, pasta, spices.
3. **Long-Term Cache (1-25 Years):** Mylar-sealed grains, beans, and freeze-dried meals.
